If you’re looking for a delicious salad that satisfies both tastebuds and tummies — this one hits just right. The combination of crunchy cucumbers, juicy tomatoes and buttery avocado paired with a zesty lemon dressing will elevate any salad repertoire. You’re sure to find it delightfully refreshing on a hot summer night.

Serves: 4 as side salad

Ingredients:
  • 1 pound Roma tomatoes, chopped
  • 1 English cucumber, sliced
  • 1/2 medium red onion, sliced
  • 2 avocados, diced
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons fresh lemon juice (from 1 medium lemon)
  • 1/4 cup chopped fresh cilantro*
  • 1/4 teaspoon salt
  • 1/8 teasoon black pepper
Instructions:
  1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado and chopped cilantro into a large salad bowl.
  2. Drizzle with olive oil and lemon juice. Toss gently to combine. Just before serving, toss with salt and black pepper.
