Whole-Grain Caramelized Onion and Apple Stuffing

This Thanksgiving stuffing serves up warm and savory flavors—all with a healthy twist. Made with whole grains, apples and a unique mix of herbs, it’s a heart-healthy and fiber-rich holiday classic that’s delicious, nutritious and very satisfying.

Ingredients:
  • 6 cups cubed whole-grain bread
  • 2 apples, diced
  • 2 onions, sliced
  • ½ cup celery, chopped
  • 2 tbsp olive oil
  • 1½ cups low-sodium broth
  • 2 tsp sage
  • 1 tsp thyme
  • 1 tsp rosemary (optional)
Directions:
  1. To dry the bread: Preheat oven to 250˚F.
  2. Spread the whole-grain bread cubes in a single layer on a large baking sheet.
  3. Bake for 30 minutes, stirring occasionally until they are lightly toasted and dry like croutons. Let cool for 15 minutes.
  4. Sauté the onions and apples in olive oil until golden brown, stirring occasionally.
  5. Stir in the sage, thyme and rosemary and cook for another minute, until fragrant. Remove from heat.
  6. In a large bowl, combine the bread cubes, onion/apple mixture and broth. Gently mix until the broth is evenly distributed throughout.
  7. Transfer to a baking dish. Bake at 375°F for 25 minutes.
