Cranberry Chocolate Chip Cookies

Let’s be honest: few things pair together as deliciously as chocolate and fruit. Our healthy and decadent cranberry chocolate chip cookies made with semi-sweet chocolate and whole wheat flour have a kick of natural sweetness from the addition of dried cranberries and applesauce. In a sea of delicious treats, these cookies will have you reaching for another with none of the guilt.

Ingredients
  • 1 ½ cups white whole-wheat flour
  • ½ cup old-fashioned rolled oats
  • 1 teaspoon baking soda
  • ½ tsp salt1 large egg
  • ¼ cup smooth unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 ½ sticks (12 Tbsp) unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup semi-sweet chocolate chips
  • ½ cup unsweetened dried cranberries
Instructions
  1. Preheat oven to 350 degrees F.  Line baking sheets with parchment paper.
  2. Add the flour and oats to a food processor and pulse until the oats are finely ground. Transfer to a medium bowl. Add the baking soda and salt and whisk to combine.
  3. In a small bowl, whisk together the egg, applesauce and vanilla.
  4. Add the butter, granulated sugar and brown sugar to a large bowl. Beat on medium-high with a mixer until the mixture is light and fluffy, about 4 minutes. 
  5. Add the applesauce-egg mixture and beat until incorporated, scraping down the sides of the bowl as needed. 
  6. Reduce the mixer speed to medium-low and gradually add the flour-oats mixture, mixing until just incorporated. 
  7. Add the chocolate chips and dried cranberries and mix until evenly distributed in the batter.
  8. Drop batter by heaping tablespoonfuls onto the prepared baking sheets, about 2 inches apart. 
  9. Bake until golden brown, 10 to 12 minutes, rotating the pans halfway through. 
  10. Let the cookies partially cool on the baking sheets before transferring to racks to cool completely. Store the cookies at room temperature in airtight containers for up to 3 days.
